This is the best time of the summer. What I love now is going out to the garden and picking fresh from the plant, Zucchini, tomatoes, basil, scallions and any thing else that is sun ripened. Then give everything a quick chop and saute with olive oil, garlic, salt and fresh cracked pepper. If you want to get decadent add Gorgonzola cheese crumbles or whatever cheese you have handy sprinkle on top. HHMMMMM.
Add a grilled chicken or steak for protein.
For an extra cool twist I like to slice green beans thin at a perpendicular angle so they are more tender. Cut corn right off the cob so the pieces stick together and form chunks. Green tomatoes can also add a nice crunch to your mix.
